Katchaman’s Amazing JAPAN guide at Nara ”HIRASO KAKINOHA ZUSHI [柿の葉寿司 平宗]”

I have eaten Kakinoha Zushi in the very famous restaurant HIRASO.

Kakinoha Zushi is one of Nara’s delicacies, made of rice seasoned with vinegar, with slices of salmon or salted mackerel on top, formed in the shape of a cube, and wrapped with a kakinoha or persimmon leaf. Persimmon leaves contain Vitamin A and chlorophyll and are healthy to eat. The mackerel used in this food is cooked according to a special method which is kept a secret. This is why, Kakinoha Zushi is available only in Nara and nowhere else in Japan.
